Greek Yogurt Pancakes

ALL YOU NEED:

  • 1 egg
  • ½ cup greek yogurt, plain
  • ½ cup water
  • 2 tbs melted butter
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt, Himalayan
  • 1-1/4 cup gluten-free flour

TOPPING:

  • ¼ cup greek yogurt
  • 1-2 tbs peanut butter, melted
 
Combine wet ingredients and mix. Add dry ingredients and mix until smooth. Pour onto griddle and cook each side until bubbles form and light brown. For the topping combine Greek yogurt and melted peanut butter. Enjoy!
