Preheat oven to 400 degrees. In a small skillet, sautee onions, spinach and mushrooms until just wilted. Turn heat off. Pour egg whites over veggies and place skillet in oven. Cook for 18-20 minutes. Top with salsa.
Combine fruit slices in bowl with yogurt, top with honey and cereal.
