Quick and easy is the name of the game! ALL YOU NEED:
Cut turkey bacon into small pieces and cook in pan or oven. Add onions and garlic. Chop sweet potato(s) into small cubes. Place in bowl and cover with olive oil and kosher salt. Spread them out evenly onto a baking sheet lined with parchment paper. Set oven to 425 degrees and roast for 25 minutes until tender with crispy exterior. Immediately combine turkey bacon and roasted sweet potato cubes in pan. Make wells in your hash for the eggs and cook until egg whites are no longer clear. Enjoy! |
