Combine all the spices together in a small bowl, making a "rub". Rub both sides of the salmon with the seasoning mix. Heat your cast iron skillet over medium high heat. You can spray with cooking spray or use a touch of olive oil. Remember that cast iron skillets are very pourous, so you really don't need much to prepare! Cook salmon for about 8-10 minutes on each side until it is flaky. I kept my heat at medium low aroung the 6 minute mark. When your timer reaches 1 minute drizzle both fillets with lemon juice to add a fresh, tangy flavor. Cook rice (see back of package for directions). Bake your olive oil covered salmon for 10 minutes at 425. I left mine in a tad longer than planned, oops. For crisp I added parmesan cheese before baking. Enjoy! Printable Recipe
