Earthy Egg & Veggie Open-faced Sandwich

ALL YOU NEED:

  • 2 slices organic cinnamon raisin Ezekiel bread (I get mine from whole foods)
  • 1 hard-boiled egg or soft-boiled, sliced in half
  • 1/2 avocado, sliced 
  • zucchini, thinly sliced (about 10)
  • 2 garlic cloves, sliced 
  • 1/2 tomato, sliced
  • preferred seasonings (basil, parsley, garlic salt, lemon pepper)
  • 2 tsp parmesan cheese (1 tbsp for each slice)
  • 1 tbsp goat cheese
  • 3-4 fresh thyme twigs
  • 2 fresh basil leaves, chopped
  • 1/2 tsp lemon juice (optional)


Preheat oven to 450 degrees.

Wash and prepare (slice) all your vegetables. Layer all veggies on both slices of toast. Add sliced egg, garlic and preferred seasonings. Top with parmesan and goat cheese. Bake for about 5-6 minutes or until toast is brown around the edges.

During the last 30 seconds add your thyme and continue to bake. Add fresh basil and lemon juice once out of oven. Enjoy!
