OK. If you are like me and appreciate getting to bed by 8:30pm/9pm every night, you'll enjoy this dish! I normally cook for the week on Sunday's, but if i'm craving something different for dinner one night, I try to keep it simple. ALL YOU NEED:
DIRECTIONS: Preheat oven to 350. Season chicken to liking and lightly coat with olive oil or coconut oil. Slice chicken horizontally (just enough to make a pocket incision). Stuff chicken with frozen spinach, fetta and hummus Place in baking dish (be sure to grease your dish or use parchment paper to avoid sticking) and cover with foil. Bake at 350 for 35 minutes, let cool and enjoy!
