ALL YOU NEED:

For the sandwich:
  • 2 whole eggs, over easy (or to your liking)
  • 1 sandwich thin, whole wheat
  • Zucchini slices, optional
  • Handful of spinach
  • 4-5 grape tomatoes
  • Parmesan cheese, grated
  • 3 strawberries, sliced


For the yogurt bowl:
  • 1 sweet potato, lightly peeled and cubed
  • Olive oil
  • Cinnamon
  • Nutmeg
  • 2 tsp coconut sugar, optional
  • 1 Cup Greek yogurt
  • 1/4 Cup coconut almond chia cereal (Trader Joe's)


Preheat oven to 400 degrees. Place cubed sweet potato in bowl and toss with olive oil, about 1 tbsp. Add cinnamon and nutmeg. Arrange on baking sheet lined with parchment paper or foil. Bake for 18-20 minutes. Let cool for about 5 minutes. Place yogurt in large bowl, add cereal to one side and sweet potatoes to the other. Top with light honey.

Cook zucchini, spinach, and eggs to your liking. Assemble sandwich and top with cheese. Place in oven for 2-3 minutes to allow cheese to melt and sandwich thin to toast.
